Le vin avait cette couleur de fin d’après-midi d’été, quand le soleil hésite entre caresser et brûler. Et au nez…un truc doux, presque timide, comme quelqu’un qui te parle à l’oreille pour la première fois. La Roussanne. J’ai ouvert cette bouteille un soir sans programme. Pas de dîner prévu, pas d’accord réfléchi. Juste l’envie de voir ce qu’elle avait dans le ventre. Ou plutôt dans le cœur. Parce que la Roussanne, c’est rarement un cépage qui débarque en criant. C’est pas une rockstar, c’est pas un vin qui claque la porte, c’est une présence. Premier nez : miel fin, poire mûre, une pointe de tisane. Un truc presque médicinal, mais dans le bon sens, genre remède de grand-mère qui sent la fleur séchée et la patience. Et puis ça évolue, un peu d’abricot, une touche d’amande, parfois une note de cire d'abeille. La Roussanne, c’est un vin qui prend son temps. Et qui te demande le tien. Le premier verre à vin n’était pas un verre. C’était une promesse mal taillée. Un truc épais, irrégulier, un peu brut. Un contenant plus qu’un écrin. Un objet qui disait juste : “tiens, bois ça”. Et pourtant… tout commence là. Je t’écris ça un dimanche soir, verre à la main (évidemment), avec une lumière un peu dorée qui traverse la pièce comme dans un vieux film de Terrence Malick, tu vois le genre. Et je me suis surpris à faire un truc bizarre : observer mon verre, pas le vin, le verre, sa courbe, sa finesse. La façon dont il capte la lumière, comme une bulle suspendue. Et je me suis dit : mais à quel moment on est passé de la coupe grossière au bijou de précision ? Au début, on buvait… comme on pouvait. Remontons, très loin : Les premières civilisations, Mésopotamie, Égypte, ne buvaient pas dans des verres. Elles buvaient dans ce qu’elles avaient sous la main: des coupes en argile, en métal, parfois en pierre. Des objets lourds,  rustiques, pas franchemen...

Il y a des légumes discrets. Des légumes qui passent, qui accompagnent, qui se fondent dans le décor. Et puis il y a l’asperge , elle ne chuchote pas, elle s'impose, elle te fixe, droite, presque fière, comme si elle savait déjà que tu allais te planter. “Alors ?” qu’elle te lance, sans trembler. “ T’as vraiment réfléchi… ou tu comptes improviser ? ” Parce que l’asperge, c’est pas un légume facile. Le Moscow Mule ne prévient pas. Il arrive froid, nerveux, presque insolent. Un peu comme croquer dans un morceau de gingembre frais sans être prêt.
