Le chasan. Ou le cépage dont presque personne ne parle. Il y a des cépages qui remplissent les verres.Et puis il y a ceux qui remplissent les conversations. Le chassan, lui, fait partie d'une troisième catégorie. Celle des cépages qu'on croise presque par hasard, au détour d'une bouteille, avant de se demander : mais pourquoi je n'en ai jamais entendu parler ?. J'adore ces rencontres-là. Elles ont quelque chose des vieux disques trouvés chez Emmaüs ou des petits restaurants sans enseigne. Personne ne les met en avant, personne ne fait la queue devant. Il y a des odeurs qui te collent à la peau comme une chanson d’été. Le gras qui tombe sur les braises. Le thym qui brûle un peu. La fumée qui s’accroche au t-shirt.
