Un vin qui te serre la main fort. Qui parle avec les bras, qui laisse des traces sur les dents, les verres, les souvenirs. La première fois que j’ai vraiment compris ce cépage, c’était dans une cuisine du Sud. Pas dans une dégustation chic avec des crachoirs alignés comme des soldats tristes. Non. Une vraie cuisine. Une table rayée par le temps. Une terrine encore tiède. Un saucisson qui transpirait légèrement.
