L’Américain qui ne l’est pas vraiment.  Il y a des verres qui sentent la rue pavée de Milan un soir d’été, le parfum des agrumes pressés, et le léger frisson de la première gorgée qui pique la langue. L’Americano , c’est ça. Une danse douce-amère qui te fait sourire avant même d’avoir bu. Un peu d’histoire, mais pas trop académique : Alors, ça date de 1860. Oui, tu peux lever les yeux au ciel et te dire “encore un vieux cocktail italien”, mais attends, laisse-moi t’emmener. L’Americano a été inventé à Milan, par Gaspare Campari,  oui, le même Campari dont le rouge te fait craquer dans un verre froid. À l’époque, on parlait pas de cocktails comme aujourd’hui, mais plutôt d’apéritifs “amer-maniques” : du bitter, du vermouth, de la bulle. Son nom ? Le Viognier , c’est pas un vin. C’est un parfum qui a décidé de devenir liquide. Je t’écris ça avec encore sur la langue un souvenir d’abricot rôti, de fleur blanche, et ce truc insaisissable, tu sais, ce parfum qui flotte quand quelqu’un passe et que tu te retournes sans savoir pourquoi. Hier soir, un verre. Juste un. Et bam : le Viognier m’a attrapé par le col comme un vieux pote trop enthousiaste.  Le contexte (ou comment j’ai replongé): Je cherchais un blanc pour accompagner un poulet rôti du dimanche. Pas un blanc sérieux. Pas un blanc technique. Un blanc qui parle. Qui raconte. Qui rigole un peu fort. Le caviste me tend une bouteille. Il dit juste : “Sens ça.” Erreur. Parce que le Viognier, c’est un piège olfactif. Tu mets le nez → tu tombes dedans. Le cépage qui sent la poésie. Le Viognier n’est pas un cépage discret. C’est pas un murmure, c’est un solo de sax. Le saké , c’est du riz qui a fait un rêve. Un rêve humide, chaud, presque charnel. Un rêve de cave obscure et de vapeur blanche. Un rêve où les grains se mettent à parler. J’étais assis à une table bancale, quelque part entre le brouhaha d’un bar et mes propres pensées. Pas au Japon, juste ici. Il y a des cocktails qui racontent une époque. Et puis il y a l’Old Fashioned , qui raconte le temps lui-même. Hier soir, j’ai regardé un glaçon fondre. Pas un petit cube pressé, non, un gros bloc lent. Aristocratique. Dans ce verre, l’ambre vibrait doucement. J’ai pris une gorgée. Et là, silence intérieur. Le Chardonnay, ce caméléon en chemise blanche.  Le Chardonnay, c’est ce pote discret qui finit toujours par voler la soirée. Pas le plus bavard. Pas le plus tatoué. Mais quand tu rentres chez toi, c’est de lui que tu te souviens. J’écris cette note parce que le Chardonnay est mal compris. Trop vu, trop bu, trop caricaturé. “Ah non, moi j’aime pas le Chardonnay, c’est trop boisé.” Phrase entendue mille fois, souvent entre deux gorgées de rosé tiède. Sauf que non.
