Il y a des vins qui demandent la permission et puis il y a ceux qui entrent dans la pièce comme un riff de basse dans un club de jazz enfumé à 1h du matin. L’Alicante Bouschet , c’est ça. Un vin qui te serre la main fort. Qui parle avec les bras, qui laisse des traces sur les dents, les verres, les souvenirs. La première fois que j’ai vraiment compris ce cépage, c’était dans une cuisine du Sud. Pas dans une dégustation chic avec des crachoirs alignés comme des soldats tristes. Non. Une vraie cuisine. Une table rayée par le temps. Une terrine encore tiède. Un saucisson qui transpirait légèrement. Et ce vin, opaque, presque noir, le genre de rouge qui ressemble à une vieille encre oubliée dans un stylo plume. Pendant longtemps, l’Alicante Bouschet a eu une réputation un peu ingrate.
