👀: Transparent like the water of a creek in Cassis, with that slight sheen that betrays a fine distillation. Nothing artificial, it flows clear and clean, almost sensual.

👃: It hits you like a basket of fresh herbs left in the sun. Juniper, obviously, but not the kind that rips your nose off, no, a sweet juniper, flirting with candied lemon, lavender, and a hint of rosemary. There's sunshine in there, a real liquid postcard. In the background, a touch of salt.

👄: The attack is frank, clean, and straightforward. Then come the spices, the roundness, an almost oily caress that lingers. There's the freshness of lemon, a hint of white pepper, and that lingering herbaceousness.

It's a gin that speaks to you without fuss, that sends you images of aperitifs by a low wall, barefoot, easy laughter, and clinking glasses.

👀: Transparent comme l’eau d’une crique à Cassis, avec cette brillance un peu qui trahit une belle distillation. Rien d’artificiel, ça coule clair et net, presque sensuel.

👃: Ça te saute dessus comme un panier d’herbes fraîches oublié au soleil. Genévrier, évidemment, mais pas celui qui t’arrache le nez, non, un genévrier doux, qui flirte avec le citron confit, la lavande et un soupçon de romarin. Y’a du soleil là-dedans, une vraie carte postale liquide. En arrière-plan, une touche saline.

👄 : L’attaque est franche, nette, sans détour. Puis viennent les épices, la rondeur, une caresse presque huileuse qui s’étire. On a la fraîcheur du citron, un peu de poivre blanc, et cette herbacité qui persiste.

C’est un gin qui te parle sans chichis, qui t’envoie des images d’apéros au bord d’un muret, pieds nus, rires faciles et verres qui s’entrechoquent.

La finale ? Longue, salivante, avec un petit retour d’agrumes et d’amande douce.

Accords mets et vin : Je le verrais bien avec un tonic très sec et une olive verte charnue, ou alors en martini : juste un trait de vermouth, beaucoup de glace, et la mer pas loin.

Welcome to the Pascual Distillery, a little corner of the South where the stills breathe the garrigue. Here, we distill as we breathe: by instinct, with the sun in our sights. No smoke and mirrors, just local plants, tanned hands, and a fierce desire to bring the terroir to the glass.

Their gin isn't a smooth London Dry; it's a gin with character, carved from limestone and sweat, with a herbaceous, sunny side that transports you straight into a summer nap. You can smell lemon, rosemary, lavender, and above all, that sincerity you recognize from the first sip.

Ça sent la pinède après la pluie, le citron qu’on presse sur un poisson grillé et le vent chaud qui colle un peu à la peau.

Bienvenue à la Distillerie Pascual, un petit coin du Sud où les alambics respirent la garrigue. Ici, on distille comme on respire : à l’instinct, avec le soleil en ligne de mire. Pas de poudre aux yeux, juste des plantes locales, des mains tannées et une envie furieuse de faire sentir le terroir jusque dans le verre.

Leur gin, c’est pas un london dry tout lisse, c’est un gin de caractère, taillé dans le calcaire et la sueur, avec ce côté herbacé-solaire qui te balance direct dans une sieste d’été. On sent le citron, le romarin, la lavande et surtout, cette sincérité qu’on reconnaît dès la première gorgée.
