Pour comprendre l'histoire de The Broody Hen, il faut d'abord remonter à l'Écosse du XVIIe siècle. Les taxes élevées sur les spiritueux ont créé un commerce florissant d'alcools distillés illégalement, dont le whisky. Pour échapper au fisc, ces distillateurs faisaient toutes sortes de tours et détours pour pouvoir encore transporter leurs précieux produits. Des barils de whisky étaient introduits clandestinement dans des voitures funéraires et des bouteilles étaient cachées dans les nids de poules pondeuses. Ces spiritueux cachés ont donc trouvé le chemin des gens et des nombreux pubs et auberges de Grande-Bretagne. C'est ce qui a inspiré Matt Gammell et Marcus Pickering de la distillerie Summerhall, quatre siècles plus tard, à nommer leur whisky The Broody Hen. La Distillerie Summerhall a été la première distillerie de gin exclusive d’Edimbourg depuis plus de 150 ans. En 2013, son premier lancement avec le gin Pickering's. La Distillerie Summerhall produit des gins vieillis en fût de chêne, dans des fûts provenant des Highlands, des îles et des Lowlands d'Écosse. En cherchant des fûts qui ajouteraient de la saveur et de la personnalité à ses gins, leur voyage les a conduits à une distillerie de whisky dans les Highlands. Parmi toutes les rangées de fûts, un lot particulier a retenu leur attention : cinq fûts empilés qui ressemblaient à un poulailler.

To understand the history of The Broody Hen, one must first go back to 17th century Scotland. High taxes on spirits have created a thriving trade in illegally distilled spirits, including whiskey. To evade taxes, these distillers did all sorts of twists and turns to still be able to transport their precious products. Barrels of whiskey were smuggled into funeral cars and bottles were hidden in the nests of laying hens. These hidden spirits have therefore found their way to the people and to the many pubs and inns of Britain. This is what inspired Matt Gammell and Marcus Pickering of the Summerhall distillery, four centuries later, to name their whiskey The Broody Hen. The Summerhall Distillery has been Edinburgh's first exclusive gin distillery for over 150 years. In 2013, its first launch with Pickering's gin. The Summerhall Distillery produces gins aged in oak barrels, in barrels sourced from the Highlands, Islands and Lowlands of Scotland. Searching for casks that would add flavor and personality to his gins, their journey led them to a whiskey distillery in the Highlands. Among all the rows of barrels, one particular lot caught their attention: five stacked barrels that looked like a chicken coop.
